The components in the mixture are natural colorants found in various fruits and flowers. They are produced from natural sources (extraction processes). The product will release trifluoroacetic acid in water. The product is hygroscopic

The chemical formula and molecular weights for the respective glycosides are:
- Cy 3-glc (1201): C₂₁H₂₁O₁₁(CF₃COOH), Mr=563,5
- Cy 3-samb (2207): C₂₆H₂₉O₁₅(CF₃COOH), Mr=695,5
- Cy 3-samb-5-glc(3213): C₃₂H₃₉O₂₀(CF₃COOH), Mr=857.5
- Cy 3-(6''-coum-samb)-5-glc (3217): C₄₁H₄₅O₂₂(CF3COOH), Mr=1002,8
The mixture contains 5 mmole of each compound. Netweight is 14mg. The product belongs to the anthocyanins which is a class of natural chemicals belonging to the flavonoids.  It is highly water-soluble and is easily degraded by hydrolysis and /or hydrogenation at temperatures >40°C.
